Fox Fungi Launches Farmer Fox and Friends Co-op to Support Local Businesses During Winter Months
DENVER — As winter approaches, small business owners especially those who depend on farmer’s markets face a seasonal sales slump. Rachel Dunhoff, owner of Fox Fungi, an urban mushroom farm near downtown Denver, is tackling this challenge by transforming her storefront into a co-op marketplace called Farmer Fox and Friends.
What began as a hobby for Dunhoff blossomed into a business selling gourmet mushrooms, from oyster to Chautauqua varieties. Despite initial struggles, she expanded from four farmer’s markets in her first year to attending up to 18 this past season, significantly increasing her reach. Inspired by the strong support from the community, Dunhoff sought a way to assist her fellow vendors as farmer’s markets come to a close for the season.
"Recognizing that we weren’t growing as much during the winter, I reached out to friends and turned the storefront into a cooperative space," Dunhoff explained. The result has been incredible: within four weeks, the co-op has grown from 20 to over 60 small businesses offering a variety of local goods.
Participating vendors like Christina Salas of Don Zorros Molino and Christopher Rice of Cool As A Cucumber see this collaboration as a vital opportunity. “This gives us a chance to showcase our products to a wider audience, especially during a slow season,” Salas stated.
Farmer Fox and Friends is poised to become a staple for local shopping, providing community members with an assortment of produce and goods. The co-op operates daily from noon to 6 p.m. at Fox Fungi, located at 2370 South Kalamath Street Unit D. Dunhoff’s initiative exemplifies the spirit of collaboration and resilience that characterizes Denver’s small business landscape.
